One of the best champagne produced in France, this post will highlight Dom Perignon 2006 vintage. I’d like to share my thoughts on the tasting notes, and a little on food pairing. Feel free to drop in your comments to share some of your thoughts at the end of this.

Just a brief introduction to spin this off, Dom Perignon is a prestige Cuvée, which is the top champagne made by a producer, and in this case Moët and Chandon champagne house. The champagne is named after a Benedictine Monk, a 17th century monk who lived in the Abbey of Hautvillers (North-eastern France).

Chardonnay, Pinot Noir (slightly more Chardonnay than Pinot Noir)


Graceful yet seductive, starting with a floral and fruity note that rapidly darkens into toasted notes. Imagine the aroma of a floral tea next to a toasted bread in front of you.


Linear profile with roundness of flavour that is creamy and silky, with a subtle accent of briny flavour of the sea. Overall, very lively and elegant on the palate.

The crisp acidity and minerality of the champagne cuts through the rich and fatty foie gras perfectly, providing a beautiful balance of flavour in the mouth. If you are not a fan of foie gras, swap it with fried chicken and it works wonder too!


Truffle has a wild and earthy depth, the umami (the fifth taste they call it) enhances the minerality and acidity in the champagne. Certainly a refreshing combination.




Caviar x Champagne – considered as the quintessential match. The rich and salty character of Caviar enhances the body in the champagne. One of the best treat for a memorable event/celebration!


To wrap it up, if you are planning to pop a champagne (which you actually shouldn’t ‘pop’ a good bottle of champagne, I’ll explain why in the next article), ditch the flute and use a white wine glass instead to fully enjoy and appreciate the bouquet of champagne. It has been almost three years since my last painting, having been busy with work and preparation for INSEAD. The enthusiasm for painting was reignited couple of weeks back, prompting me to head down to Arteastiq in Mandarin Gallery, Singapore.

With a background of Ophthalmology and Aesthetics, I have chosen to paint the eye, one of the most interesting organ in the human body. Our eyes communicate non verbally much more than we imagine, and convey messages far more vivid than words. I am sure some of you will concur.



Try covering the left quarter of the painting. you are more likely to see a neutral looking eye. Now, try again covering the right quarter of the painting, you are likely to see an evil looking eye, filled with hatred and anger.

This is rather similar to one of the general litmus test psychologist uses to determine whether a person is an optimist or a pessimist – ‘Is the glass half empty or half full?’. I bet that sounds familiar. Have a look again to see which expression of the eye strikes you more.

The session last for about three hours, and it comes with a flavored tea to make you feel even more ‘artistic’.  A canvas measuring 50×50 will be provided, along with unlimited supply of acrylic paint. I personally find it indulging, and stress relieving, definitely a good way to spend a weekend afternoon. Hope you enjoy this article as much I enjoy painting it, till next time.

Blackheads and Whiteheads

If the pore is closed after being filled with impurities, it will appear white resulting in whiteheads. Both blackheads and whiteheads are removed quite easily with skin care products or superficial exfoliation.

Papules and Pustules

Large pimples as a result of clogged pores becoming extremely irritated, hence breaking down their walls, will result in formation of papules and pustules. Papules are hard when you touch them and if they are more concentrated in one area, it can create a ‘sandpaper’ feel to your skin. Pustules are yellow and have a kind of fluid similar to that in blisters. These are much harder to treat compared to blackheads and whiteheads. The treatment plan may likely consists of a combination of topical, oral and laser treatments.

Nodules and Cysts

Badly clogged pores can result in much swelling and infection may spread deeply into the skin. This will result in the formation of nodules and cysts. Nodules are hard and can be rather painful.
White cysts are soft and contain pus. The treatment plan may be more complex and likely requires a course of oral antibiotics in addition to other topical, oral and laser treatments
